Ingredients:

  • 2 beets, peeled and very thinly sliced
  • 1/2 onion, very thinly sliced
  • 2 T apple cider vinegar
  • 1 T extra virgin olive oil

Instructions:

  • Combine all ingredients in a bowl and marinate for at least one hour
