Ingredients:
- 2 beets, peeled and very thinly sliced
- 1/2 onion, very thinly sliced
- 2 T apple cider vinegar
- 1 T extra virgin olive oil
Instructions:
- Combine all ingredients in a bowl and marinate for at least one hour
